Valli + Tobie receptas

Prieš keletą mėnesių pirmą kartą per keturis metus pasprukau visam savaitgaliui nuo šeimos. Moteriškas draugių savaitgalis. Visi vyrai ir vaikai už borto, o mes nuostabioj gamtoj, vasarnamyje ant jūros kranto.

Nors visos draugės žino mano pomėgį suktis virtuvėje, bet nusprendė neleisti man ten sukiotis visą savaitgalį ir išsidalino, kuri ką ir kada gamins. Tad aš likau atsakinga tik už sekmadienio pusryčius. Jie nebuvo niekuo įpatingi - virti kiaušiniai su švediška ikrų mase ir traškia duona.
Labiausiai tą savaitgalį sužavėjęs skonis - šokoladinis larzyno riešutų pyragas. Po vakarienės valgomo pyrago tada nenufotogravau, nes sėdėjome žvakių šviesoje. Po to ilgai mąsčiau, ar visgi įsigyti lazdynų riešutų likerio, ar ne. Mažo butelio neradau, o litrinio nenorėjau pirkti, tad pagaliau apsisprendžiau, kad pyragą kepsiu be alkoholio sudėtyje.




Receptą mano draugė Kate rado Delicious žurnalo 2012 m. gegužės numeryje. Recepto autorė - Valli Little - garsi receptų kūrėja ir ilgametė žurnalo redaktorė, kuri per mėnesį sugeba sukurti apie 60 receptų.
Recepte ji naudoja pirktinę trapią šokoladinę tešlą. Prabangi ta tešla. Man ranka nekyla tiek mokėti, tad susiradau kito Australijoje garsaus virtuvės šefo ir kulinarinių knygų autoriaus Tobie Puttock receptą. Taigi pirktinė tešla ir Frangelico likeris iš Valli recepto out, o Tobie tešla in.

Šokoladinis lazdynų riešutų pyragas

Tešlai:
300 g miltų
35 g kakavos
110 g smulkaus cukraus
160 g šalto sviesto
2 kiaušiniai

Įdarui:
100 g sviesto
165 g smulkaus cukraus
175 g tamsaus cukraus sirupo
165 g šokoladinio kremo Nutella
2 kiaušiniai
75 g skrudintų lazdyno riešutų




Visus tešlos produktus, išskyrus kiaušinius, sudėkite į virtuvinį kombainą ir sukite, kol gausite smulkius trupinius. Po vieną įmuškite kiaušinius. Miltuotomis rankomis tešlą suminkykite į rutulį, jį suplokite ir suvyniokite į maistinę plėvelę. Laikykite šaldytuve 30 minučių.
Tešlą iškočiokite miltuotu kočėlu ant miltuoto paviršiaus. Perkelkite į kepimo formą išimamu dugnu. Laikykite šaldytuve 30 min.

Pastaba. Po to, kai tešlą sudėjau į kepimo formą, man liko beveik 1/3 tešlos, tad iš jos išsikepiau krepšelius, kuriuos užpildžiau ledų kamuoliuku.Pagal receptą likusią tešlą reik iškočioti ir sausainių režtuku banguotais kraštais susipjaustyti į juosteles, iš kurių reik nupinti tinklelį ant pyrago viršaus.

Orkaitę įkaitinkite iki 180C temperatūros.
Tešlos krepšelio dugną subadykite šakute. Užtieskite kepimo popieriumi ir pripildykite kepimo svoreliais arba nevirtais ryžiais. Kepkite 8 minutes. Nuimkite svorį ir popierių ir kepkite dar 5 minutes. Ugnį sumažinkite iki 160C temperatūros.

Kol kepa pyrago krepšelis, virš mažos ugnies mišydami ištirpinkite sviestą ir cukrų. Supilkite sirupą bei sudėkite šokoladinį kremą. Išmaišykite iki vientisos masės. Nuimkite nuo ugnies ir leiskite šiek tiek atvėsti. Įmaišykite kiaušinius (jei naudojate, ir alkoholį) bei lazdynų riešutus.

Pastaba. Kitą kartą aš daryčiau šiek tiek kitaip. Riešutų priberčiau į tešlos krepšelį, kad pasidengtų visas dugnas, o tada ant viršaus užpilčiau šokoladinę masę.

Masę pilkite į tešlos krepšelį. Kepkite 45 minutes arba kol pyrago įdaras nebeliūliuos. Atvėsinkite. Dabar jau galima valgyti :)

New taste combination / Naujas skonių derinys

My mother-in-law has many food magazines, so each time I visit my parents-in-law I have a lot to read. Each time I find something interesting for my taste. This time a new taste combination attracted my attention. Pears and fennel.  Something new to try for traditional family Sunday dinner.

Mano anyta turi begalę maisto žurnalų, tad kai lankausi pas uošvius, visada turiu daug ką paskaityti. Kiekvieną kartą randu kažką įdomaus savo skoniui. Šįkart mano dėmesį patraukė naujas skonių derinys. Kriaušės ir pankolis. Bus kažkas naujo paragauti per tradicinius sekmadieninius šeimos pietus.


Pear pie with fennel / Kriaušių pyragas su pankoliu
4 big pears / 4 didelės kriaušės
5 bitter almonds / 5 kartieji migdolai
2 tsp fennel powder / 2 arb. š. pankolių miltelių
50 ml sugar / 50 ml cukraus
200 ml flour / 200 ml miltų
100 g butter / 100 g sviesto
1 tbsp sugar / 1 valg. š. cukraus


If you can't find fennel powder, so use fennel seeds. Crush and grind them in mortar and pestle. At least I did so today.
Cut pears in quarters and then slice them in not very thin slices. Put in oven-safe form. Chop bitter almonds and then grind them together with fennel and sugar in a mortar. Sprinkle this mixture on pears. In a seperate bowl make crumbs from flour, butter and sugar. Sprinkle them on pears.
Bake for 25 min at 225 C. Let to cool a bit. Eat with vanilla ice-cream or whipped cream.

Jei negausite pankolių miltelių, tai naudokite pankolių sėklas. Sugrūskite jas prieskonių grūstuvėje. Bent jau aš taip dariau šiandien.
Supjaustykite kriaušes ketvirčiais, o tada nelabai plonais gabaliukais. Sudėkite į orkaitei skirtą indą. Sukapokite karčiuosius migdolus ir sugrūskite juos kartu su pankoliais ir cukrumi grūstuvėje. Užbalstykite šį mišinį ant kriaušių. Atskirame inde iš miltų, sviesto ir cukraus pagaminkite trupinius. Apibarstykite jais kriaušes.
Kepkite apie 25 min 225 C temperatūroje. Leiskite atvėsti. Valgykite su vaniliniais ledais.

No miracle happened on 10:10 GMT +1. Maybe something special happend in you time zone at 10:10? No? So it's just a simple day. And as usually I bake a cake on Sunday. A simple apple pie which I call a students pie. Why stendents? Because it's with oatmeal, which is a typical breakfast food for Swedish students. Because it can be eaten by a spoon directly from the baking form, so lazy students do not have to wash a lot of dishes. Because it's cheap and students are not the richiest people in the world.

10:10 Grinvičo+1 laiku neįvyko joks stebuklas. Gal kas ypatingo nutiko 10:10 jūsų laiko juostoje? Ne? Tad tai tik įprasta diena. Ir kaip kiekvieną sekmadienį aš kepu pyragą. Paprastą obuolių pyragą, kurį vadinu studentų pyragu. Kodėl studentų? Todėl kad su avižomis, kurios yra tipiškas švediškų studentų pusryčių maistas. Todėl kad galima valgyti šaukštu tiesiai iš kepimo indo ir tingūs studentai išvengia plauti daug indų. Todėl kad pigus, o studentai nėra turtingiausieji pasaulio žmonės.


Student apple pie / Studentiškas obuolių pyragas

6 sour apples / 6 rūgštūs obuoliai
150 g butter / 150 g sviesto
300 ml oatmeal / 300 ml avižų
200 ml sugar / 200 ml cukraus
50 ml light sugar syrup / 50 ml šviesaus cukraus sirupo
150 ml flour / 150 ml miltų


Melt butter on low heat, add outmeal, sugar, syrup and flower and stir well. Peel and slice apples. Take oven-safe form, butter it and put all apple slices in it. Cover apples with oatmeal mix. Bake in the middle of the oven at 175 C for 30 min.
Look for the biggest spoon at your place and enjoy!

Ant mažos ugnies ištirpinkite sviestą. Sudėkite avižas, cukrų, sirupą, miltus ir gerai išmaišykite. Nulupkite ir supjaustykite skiltelėmis obuolius. Skilteles sudėkite į sviestu pateptą orkaitei tinkantį indą. Ant viršaus paskirstykite avižų masę. Kepkite orkaitėje apie 30 min 175 C.
Susiraskite didžiausią šaukštą namuose ir mėgaukitės!

Divine apple pie

Since I got pregnant I am reading a forum for Supermoms in Lithuania. One Supermom Sonatina posts many recipes and many other moms commend some of them. So I decided to try one of them. An apple pie with cottage cheese and almond flakes.
But as always I did not follow the recipe entirely. Took it only as a guidelines. So ready steady go!

For the bottom pastry I used:
300 ml wheat flour, pinch of salt, 90 g cream cheese, 50 g butter, some drops of vanilla and bitter almond essence, 120 ml brown sugar, 80 ml minced almond

For the filling I used:
400 g cream cheese, 110 ml brown sugar, 1 egg, pinch of salt, 2 tea spoons freshly squeezed lemon juice

For the top pastry I used:
2 table spoons wheat flour, 4 table spoons brown sugar, a few drops of water, pat of cream cheese

And of course one need apples for an apple pie :) I used only 2 big apples, but it's up to you to use more. I also added 1 pear.

Cream butter and cream cheese together. Add brown sugar and essences. After a few minutes creaming add flour, salt and minced almonds. I did everything with a spoon, but probably it works well with the food processor also. The pastry does not have to be solid.



Separate 2/3 of the pastry and distribute it evenly in the cake tin.


Bake in 180º C for 12-15 min (depends on the oven). While baking, prepare the top pastry. Use 1/3 of the bottom pastry. Add flour and brown sugar. As pastry became like sand, so I added a few drops of water and a pat of cream cheese to get the crumbs.

Then prepare the filling - cream together cheese cream and brown sugar, add egg, salt and lemon juice. Stir well.
Peel the apples and the pear. In original recipe 0,5 kg apples are used. I was ready to peal 2 apples and 2 pears , but while peeling decided it will be enough only with 1 pear.
Cover the bottom pastry with apple/pear slices. Cover with the filling. Spread crumbs on the filling and sift almond flakes.



Bake in the middle of the oven for 35-40 min. The original recipe says to bake for 45-50 min, however I made one such cake on Tuesday and one Wednesday, baking the first for 48 min and the second one for 36 min. The first one became much brown and quite hard. The second pie was goldish yellow and soft. I liked the soft version more.
When the pie is ready, leave it in the cake tin for 30 min to cool. Cut it only when totally cool.
Vanilla ice cream or natural yogurt suits well to this pie.
