Italian lunch / Itališki pietūs

Recently I've been to a deli market, where I've bought one package of bambini bocconcini, one package of lumaconi pasta and several packages of  cherry and kumato tomatoes. The outcome was an Italian lunch with  insalata caprese (Caprese Salad) and tomato salad stuffed pasta shells on the menu.

Neseniai lankiausi delikatesiniame turgelyje, kur įsigyjau pakuotę mažų bocconcini sūrio rutuliukų, pakuotę lumaconi makaronų ir keletą dėžučių vyšninių ir kumato pomidoriukų. Iš viso šito išėjo puikūs itališki pietūs.




Caprese Salad / Kaprio salotos

300 g cherry and kumato tomatoes / 300 g vyšninių ir kumato pomidoriukų
10 bambini bocconcini / 10 mažų bocconcini sūrio rutuliukų
100 ml extra virgin olive oil / 100 ml ypač gryno alyvuogių aliejaus
2 tbs tomato paste / 2 valg. š. pomidorų pastos
pinch or two of sugar / vienas kitas žiupsnis cukraus
50-60 ml white wine vinegar / 50-60 ml baltojo vyno acto
 basil leaves / baziliko lapeliai




Arrange tomatoes and drained bocconcini on a plate. In a small bowl whisk together all other ingredients, reserving basil leaves for garnishing. Drizzle dressing over the salad and top with basil leaves. 
For a variaty, use other sorts of baby tomatoes. Halve bigger ones. As well bocconcinni can be substituted by buffalo mozzarella, teared into smaller pieces.

Lėkštėje sudeliokite pomidoriukus ir sūrio rutuliukus. Mažame dubenėlyje suplakite likusius produktus, išskyrus baziliko lapelius. Apšlakstykite salotas padažu ir papuoškite baziliko lapais.
Įvairumo dėlei naudokite ir kitas mažųjų pamidoriukų rūšis. Didesnius perpjaukite per pusę. Mažus bocconcini sūrio rutuliukus galite pakeisti smulkintu/plėšytu mocarelos sūriu.




For the stuffed pasta I have no recipe. Just quarter some tomatoes, some bocconcini balls, add some finely chopped shallot, sprinkle with salt and pepper and drizzle some extra virgin olive oil. Then taste, taste, taste. And adjust the seasoning, if needed. Cook pasta according to the package instructions. I made my pasta shells al dente, stuffed with the salad (count 2-3 teaspoons per shell), drizzled some more olive oil and topped with basil leaves.

Recepto kimštoms kriauklelėms kaip ir nėra. Paprasčiausiai supjaustykite ketvirčiais pomidoriukus ir sūrio rutuliukus, pridėkite smulkiai pjaustyto askaloninio česnako (šaloto), pagardinkite druska ir pipirais, apšlakstykite ypač tyru alyvuogių aliejumi. Tada ragaukite, ragaukite, ragaukite. Jei reikia, subalansuokite prieskonius. Makaronus išvirkite pagal pakuotės nurodymus. Savuosius gaminau al dente. Kriaukleles prikimškite pomidorų salotų (reikės 2-3 arb.š. salotų kriauklelei), apšlakstykite dar šiek tiek alyvuogių aliejaus ir papuoškite bazilikų lapeliais.

I long for Italy / Ilgiuos Italijos

After watching the movie Eat Pray Love, all memories of days spent in Rome came back. My husband and I were walking along Rome streets this way and that, loosing the feeling in our feet in the evenings. It was hot summer, really hot. We were filling our water bottles with every drinkable water tap. Drank probably 6-8 litres of water per day, but never needed a toilet. Because of the heat we ate little, but what we ate tasted probably twice better because of us being dog-tired. One of the days I ordered gnocchi. My mouth still waters when thinking of them.

Pažiūrėjus filmą Eat Pray Love, sugrižo prisiminimai apie dienas praleistas Romoje. Mano vyras ir aš vaikščiojome Romos gatvelėmis skersai išilgai nebejausdami vakarais kojų. Buvo karšta vasara, labai karšta. Vandens į savo buteliukus pildavomės ties kiekvienu geriamo vandens čiaupu. Išgerdavom tikriausiai apie 6-8 liturs vandens, bet niekada neprireikė tuoleto. Dėl karščio nelabai norėjosi valgyti, bet tai ką valgėm buvo mažų mažiausiai du kartus skaniau vien dėl nuovargio. Vieną dienų aš užsisakiau njoki. Burnoj vis dar kaupiasi seilės apie juos pagalavojus.



Gnocchi with pesto rosso / Njoki su pesto rosso

950 g potatoes, boild with skin / 950 g bulvių, virtų su lupena
340 ml flour / 340 ml miltų
1 egg / 1 kiaušinis
salt / druska
2 tbsp pesto rosso per person / 2 valg. š. pesto rosso asmeniui
milk / pienas


Peel boiled potatoes while still hot. Be careful not to burn yoour fingertips as I did today as if it was not enough with one bad burn injury in the family last week. Pass them through potato riser.

Dar karštas bulves nulupkite. Būkite atsargūs ir nenusideginkite pirštų galiukų kaip šiandien padariau aš, tarsi vieno stipraus nudegimo šeimoje praėjusią savaitę būtų buvę negana. Bulves perspauskite trintuve.


Add flour, egg and salt. Knead on floured surface. Take small amounts of dough and roll  into bolls. Italians do the other way, but I find it very relaxing to roll many small bolls. Press bolls with a fork or cheese grater. Add them in 4 rounds into the boiling water and cook untill they float to the surface.
Mix pesto with some milk, so the pesto gets tender, but still not watery. Pour over gnocchi. Hope you sense Italy in your mouth right now!

Suberkite miltus, įmuškite kiaušinį ir pagardinkite druska. Minkykite ant miltais apibarstyto paviršiaus. Imkite po mažai tešlos ir sukite rutuliukas. Italai njoki daro kitu būdu, aš labai gerai atsipalaiduoju sukdama daug mažų rutuliukų. Rutuliukus lengvai paspauskite šakute arba tarka. Per keturis kartus dėkite rutuliukus į verdantį vandenį ir virkite, kol iškils į paviršių.
Pesto sumaišykite su šiek tiek pieno, kad įgautų lengvą konsistenciją, bet vis dar nebūtų pavandeniavusi. Užpilkite ant njoki. Tikiuosi burnoje jaučiate Italijos skonį!
